Chef Monteiro was born and raised in Calgary, Alberta
Lancelot Monteiro apprenticed under Chef Kevin Turner at Calgary’s highly acclaimed
Brava Bistro. He graduated from SAIT’s culinary program with honours in 2007, and began travelling to further expand his culinary knowledge. Chef Monteiro traveled to England, France, Italy, Spain, and Honolulu to hone his craft and master a variety of flavours.
After opening a successful restaurant in Fernie, British Columbia, he joined the Canadian Rocky Mountain Resorts family in late 2010, working under long-time Cilantro Head Chef Ken Canavan.
In 2012 Chef Monteiro opened Bar C in Calgary’s belt line district, and in 2014 was given the opportunity to head Chef both Bar C and Cilantro for Canadian Rocky Mountain Resorts. With the closure of Bar C in 2016 Chef Monteiro had more time to focus on the company’s game meat program and worked along side Urban butcher staff to develop new recipes for your game product. In 2021 Chef Monteiro made the move to Banff and Joined the team at Buffalo Mountain Lodge to reopen the sleeping buffalo restaurant into the newly renovated Prow restaurant. Moving away from traditional fine dinning the Prow offers exceptional game selection, fresh made pastas and local charcutier.
